Does the software work if I lose 4G/5G signal on site?

Absolutely. Uinta is built for remote field work. You can cache your background maps before leaving the office, collect all your data offline, and the software will automatically sync to the cloud as soon as you re-enter Wi-Fi or cellular coverage.
